Winemaking Notes: We harvested the grapes for this wine during the cooler morning and evening hours. This wine was fermented at low to moderate temperatures of 55-62°F and aged on French oak to create a crisp acidity and soft finish. Our winemaker carefully selected aromatic yeast to intensify the natural aromatics and enhance the fruit characteristics. After fermentation, the wines were stored in stainless steel tanks to preserve their bright acidity and balance.
