Tasting Notes: The 2022 Dark Horse Cabernet Sauvignon is a bold, well structured, and full bodied red wine. A bouquet of dark berry, freshly ground coffee and toasted oak notes bound from the glass, then carry through to the palate. Undercurrents of cola, shaved dark chocolate, and a dust of cinnamon add rich complexity that carries through to a strong finish.
Viticulture Notes: Grapes for our 2022 Cabernet Sauvignon are sourced from select vineyards in California’s Lodi region. Harvest 2022 produced slightly lower yields after experiencing temperature variations. The grapes show beautiful intense color and structure and complex flavor characteristics.
Winemaking Notes: We chose to harvest the grapes for our Cabernet during the cool morning hours. Each lot is kept separate throughout the winemaking process. Our winemaker kept a close eye on each lot and then brought them together during the blending process. Some of our Cabernet lots spend as much as 28 days on skins to drive complexity and a rich mouthfeel. The resulting wine is richly layered and complex.
