Brut Rosé Bubbles 375mL
Tasting Notes: Our Dark Horse Sparkling Brut Rosé has lively bubbles and an inviting pink hue. Fresh notes of stone fruits are layered with hints of refreshing citrus and red berries. This light-bodied bubbly offers cleansing acidity and a crisp finish.
Viticulture Notes: Our winemaker, Beth Liston selected the grapes for our Rosé from premier vineyards throughout California. Record rainfall during the growing season rejuvenated dry soils and encouraged an early bud break. The ample wet weather early in the year was balanced by warm temperatures in the late summer. Heat spikes came at opportune moments and ultimately led to an earlier harvest for our Pinot Noir and Chardonnay grapes. The resulting yields showcased concentrated fruit character and vibrant aromas in the final blend.
Winemaking Notes: The grapes for this release of our Brut Rosé were harvested at optimum ripeness during low nighttime temperatures to preserve freshness. Beth fermented the wine at low to moderate temperatures between 55⁰ and 62⁰ F, carefully selecting aromatic yeast to achieve more intense aromas and an expressive mouthfeel. After fermentation, all lots were aged in stainless steel tanks until bottling to preserve their brightness and balance.
