Tasting Notes: Our Dark Horse Sparkling Brut opens with enticing aromas of fresh apples and pears. Delicate bubbles burst with lively fruit notes that combine with hints of toasted oak, giving way to a layered, lasting finish.
Viticulture Notes: Our winemaker, Beth Liston selected the grapes for our Sparkling Brut from premier vineyards throughout California. Record rainfall during the growing season rejuvenated soils and led to an early bud break. Early wet weather in the year was balanced by hotter temperatures in late summer, keeping berry size small. The perfectly timed heat spikes resulted in an early harvest for our Chardonnay grapes. Resulting yields offered vibrant layers of concentrated fruit notes and bright aromas in the glass.
Winemaking Notes: For this release, grapes were harvested at optimum ripeness during low nighttime temperatures to preserve freshness. Beth fermented the wine at low to moderate temperatures between 55⁰ and 62⁰ F, carefully selecting aromatic yeast to achieve more intense aromas and an expressive mouthfeel. After fermentation, all lots were aged in stainless steel tanks until bottling to preserve their brightness and balance.
