What is Cabernet Sauvignon? It’s one of the world’s most beloved red-wine grapes – and we started with one of the places it grows best – California. From the sunshine and moderate climate to dry volcanic soils, Cabernet grows extraordinarily well here, producing fruity, rich, full-bodied wines. And it’s been our Dark Horse mission to discover the most exceptional sites across the state. Over the years, we’ve worked hard to cultivate strong relationships – visiting every vineyard and tasting their grapes for ideal ripeness. Come harvest, we get the first pick of grapes from over 400 growers.

When we first created Dark Horse Wine, we were just crazy enough to believe that with the right tools and innovative techniques, a reasonably priced Cabernet could be ridiculously good. Unbridled optimism? Maybe. Some of America’s most expensive wines are made from this noble grape. But from that bold idea, our winemaker Beth Liston led the charge to balance big fruit flavors with deep mouthwatering notes. And it’s all in the details. From letting the wine and grape skins sit together for weeks beyond the typical length (or “extended maceration”) to delicately fermenting and oak-aging the Cabernet, our techniques deliver delicious depth and layers. Vine to bottle, we taste our wine over 100 times to ensure the highest quality and best taste, because that’s what greatness demands.
