We selected the ripest fruit from the Lodi, Delta and Clarksburg areas. After gently pressing on a Membrane Press, the juice underwent alcoholic fermentation with hand selected yeast. After the primary fermentation, the wine was kept on fine fermentation lees for 6-8 months. Cool tank storage was used to preserve the fresh fruit and tropical aromas which then marry with creamy hints of oak character to create a rich and elegant wine.
