We selected the ripest fruit from the Lodi, Delta and Clarksburg areas. After gently pressing on a Membrane Press, the juice underwent alcoholic fermentation with hand selected yeast. After the primary fermentation, the wine was kept on fine fermentation lees for 6 months. Cool tank storage was used to preserve the fresh fruit, aromas, and tastes.
